Wheat, especially white flour, was always the food of the wealthy, whereas the poor had to make do with “darker” grains, rye and barley, which were also easier to grow tolerating poorer soil and less favourable growing conditions. Barley is very short and is a good yielder generally having far more heads per plant than wheat. Barley can come either naked or hulled, two row or six row. Two row barley is lower in protein and hence is used for malting purposes. In industrial uses of barley, the six row barley would be used for animal feed as it is higher in protein. For human consumption, barley can be used in soups, stews, breads and more.
Bere has 6-row blond bearded heads. It is apparently the oldest barley cultivated in Europe.
